A vegetarian dish made with heart

At Kokyoji temple, you can experience making sesame tofu under the direct guidance of mothers who make vegetarian dishes. This dish is made entirely by hand beginning with roasting the sesame seeds. As this is a simple dish, the final results will be affected if you cut corners for even a single step. Grind the sesame seeds in a mortar with your heart before stirring it slowly and carefully in a pan to bring out the flavors.

Sesame tofu

The roasted sesame seeds are ground in a mortar until their oil is released. The ground sesame paste is then wrapped in a cloth and its liquid extracted by squeezing. Arrowroot flour is added to the liquid and stirred over a fire using a wooden spatula for 30 minutes. The mixture is then poured into a mold until it solidifies.
