Kakuzushi, a local specialty: This dish contains seasonal ingredients such as shiitake mushrooms, carrots, burdock, and chestnuts that have been simmered in a sweet broth.

At the mountain village where "Kayabuki no Fuchi" is located, seasonal ingredients have been used in dishes since ancient times, with preserved items being made in late autumn after the harvest season is over to prepare for winter. In the Iwami region, "kakuzushi" is made during festivals and on celebratory occasions. Kakuzushi does not contain seafood. It is also known as "Inakazushi (rural sushi)" as it is made using ingredients that are available to farmers. Although it resembles simple sushi, kakuzushi contains various ingredients including vegetables such as shiitake mushrooms and carrots that have been simmered in a sweet broth. The local cuisine of rural areas can bring joy to your heart and soul.
